Ingredients for Carrot Halwa
Ingredient 1 = Carrot (grated) – 4 cups (Visit Tips for Cooking for grating carrot)
Ingredient 2 = Milk – 1 cup
Ingredient 3 = Ghee – 2 tablespoons
Ingredient 4 = Sugar – 1/2 cup
Ingredient 5 = Raisins – 1 tablespoon
Ingredient 6 = Green cardamom powder – 1/4 teaspoon
Ingredient 7 = Cashewnuts (chopped) – 1/2 tablespoon

Preparation Method

Begin by bringing milk to a boil, then reducing the heat and letting it simmer for around 10 to 15 minutes. It should go down to half the amount that you started with.
Grab a pressure cooker and start putting grated carrots and then the boiled milk in it. Wait for 2 whistles with the lid on, then turn off the heat and push aside for 5 minutes.
Heat the ghee in a kadai, adding carrots and letting sauté next.
Keep cooking until the extra liquid evaporates. This step should take 7 to 8 minutes.
Put in the sugar and let cook for another 2 to 3 minutes, stirring frequently.
Mix in the cardamom powder, then adding raisins and cashew nuts, cooking for another minute. Serve it hot, with optional whipped cream topping.


Gajar Halwa with Ricotta Cheese

Gajar Halwa with Ricotta Cheese

2 C coarsely grated carrots
1/4 C whole milk
2 Tbs Ghee or Unsalted butter
1/2 C Ricotta cheese
1/4 C sugar
1/2 tsp cardamom powder
A few raisins & cashew nuts
Place the milk and grated carrots in a microwave-safe bowl and mix. Loosely cover with a lid, or cover with plastic wrap pierced with a fork. Ideally cook for about six minutes, or when you see the carrots are tender. Place ghee in a pan over medium heat, and sauté the cashews until golden. Now take off the cashews and set aside. Add the ricotta to the same pan that the cashews were cooked in, and cook until it becomes slightly dry (about 2 minutes). Add the cooked carrots and milk in to the pan and cook until the liquid evaporates. Stir in raisins, cardamom, and cashews. Cook until the mixtures separates from the sides of the pan. Serve.
